Edamame Goat Cheese Spread

This is a very easy and versatile full-flavored dip that packs in all the fiber, protein and energy you need!

Edamame Goat Cheese Dip/Spread

Serves: 5

Ingredients

  • 2 cups of shelled edamame (fresh or frozen)   
  • 1/4 cup extra virgin olive oil
  • 5 tbsp goat cheese in room temperature
  • 1 large clove of garlic (sliced)
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1/2 tbsp crushed black pepper or as per taste
  • 2 tsp salt or as per taste

(all ingredients should be in room temperature)

In food processor take all the ingredients except olive oil and puree until it starts to come together into a paste. Stop the processor and with a spatula scrape down the the sides and re-start the processor. Slowly drizzle the olive oil as the processor is running until the mixture comes together in a smooth paste.

Transfer the edamame puree in a bowl and serve with your favorite corn or rice chips or spread liberally on warm toasted multigrain sourdough bread.
